Classic chocolate cupcakes




Ingredients:

1 and 1/2 cups all-purpose flour
1 cup granulated sugar
1/2 cup unsweetened cocoa powder
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup vegetable oil
2 large eggs
1 teaspoon vanilla extract
1 cup warm water or coffee
For the frosting:
1/2 cup unsalted butter, at room temperature
2 cups powdered sugar
1/2 cup unsweetened cocoa powder
1 teaspoon vanilla extract
2-3 tablespoons milk or heavy cream

Instructions:

For the cupcakes:

  • Preheat your oven to 350 degrees Fahrenheit and line a muffin tin with cupcake liners.
  • In a medium-sized mixing bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Set aside.
  • In a separate large mixing bowl, beat the oil and eggs together until well combined. Stir in the vanilla extract.
  • Gradually add the dry ingredients to the egg mixture, alternating with the warm water or coffee, and mixing until just combined.
  • Use a cookie scoop or spoon to divide the batter evenly among the cupcake liners.
  • Bake for 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.
  • Remove the cupcakes from the oven and let them cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.

For the frosting:

  • In a large mixing bowl, beat the butter until light and fluffy.
  • Gradually add the powdered sugar, cocoa powder, vanilla extract and 2 tablespoons of milk/cream, and beat until the frosting is smooth and creamy. Add more milk/cream as needed to reach desired consistency.
  • Once the cupcakes are cool, pipe or spread the frosting on top of each one.

  • Note: You can add chocolate chips or nuts to the batter for some additional texture. Also, you can adjust the sugar quantity if you need it sweeter or less sweet.
