Danish Cold Buttermilk Soup
Ingredients:
1 liter (4 cups) buttermilk
2-3 tablespoons sugar
1 teaspoon vanilla sugar (or 1/2 teaspoon vanilla extract)
1 egg yolk
1 tablespoon cornstarch
1/4 teaspoon salt
1/2 lemon, juice and zest
1/2-1 vanilla bean, scraped (optional)
Fresh strawberries and kammerjunker (Danish vanilla biscuits) for serving
Instructions:
In a large bowl, whisk together the buttermilk, sugar, vanilla sugar (or extract), egg yolk, cornstarch, salt, lemon juice and zest, and vanilla bean (if using). Mix until smooth.
Cover the bowl with plastic wrap and chill in the refrigerator for at least an hour or until well chilled.
Once the soup has chilled, remove from the refrigerator and give it a good stir to make sure all the ingredients are well combined.
Serve the soup in bowls and garnish with fresh strawberries and kammerjunker biscuits.
