write a Portuguese chocolate custard tarts
2 cups (500ml) whole milk
2 cups (500ml) heavy cream
1 cup (200g) granulated sugar
1/4 cup (30g) cornstarch
1/4 teaspoon salt
8 egg yolks
4 oz (115g) dark chocolate, chopped
1/2 teaspoon vanilla extract
1 recipe for Pate Sucree (Sweet Tart Dough)
Instructions:
To make the custard, in a medium saucepan, combine the milk, cream, sugar, cornstarch, and salt. Cook over medium heat, stirring constantly, until the mixture comes to a boil.
In a separate mixing bowl, whisk the egg yolks together. Gradually pour the hot milk mixture into the egg yolks, whisking constantly.
Pour the mixture back into the saucepan and cook over medium heat, stirring constantly, until the custard thickens and coats the back of a spoon, about 5 minutes.
Remove the pan from the heat and stir in the chopped chocolate and vanilla extract until the chocolate is melted and the custard is smooth.
Let the custard cool to room temperature.
Preheat the oven to 350°F (180°C).
Roll out the Pate Sucree dough and line the bottom and sides of 6 (4-inch/10cm) tart pans with removable bottoms.
Pour the cooled custard into the tart shells.
Bake the tarts for 25-30 minutes, or until the crust is golden brown and the filling is set.
Let the tarts cool to room temperature before serving.
Note: Pate Sucree (Sweet Tart Dough) is a sweet pastry dough that is traditionally used for making tart crusts. You can find a recipe for it online or use store-bought pie crust dough.
