 Easy Beef Soup recipe


Ingredients:

1 lb beef stew meat, cut into small pieces
1 onion, chopped
2 cloves garlic, minced
2 carrots, chopped
2 celery stalks, chopped
4 cups beef broth
1 can diced tomatoes (14.5 oz)
1 tsp dried thyme
1 tsp dried rosemary
1 tsp salt
1/4 tsp black pepper
1 cup small pasta (such as macaroni or shells)
Fresh parsley, chopped, for garnish


Instructions:

In a large pot or Dutch oven, brown the beef over medium-high heat until it is no longer pink. Remove the beef from the pot and set it aside.


Add the onion, garlic, carrots, and celery to the pot, and cook until the vegetables are tender and the onion is translucent, about 5-7 minutes.


Add the beef back to the pot, along with the beef broth, diced tomatoes (with their juices), thyme, rosemary, salt, and black pepper. Stir to combine, and bring the soup to a simmer.


Reduce the heat to medium-low and let the soup simmer for 20-25 minutes, stirring occasionally.


Add the pasta to the soup and continue simmering until the pasta is cooked, about 10-12 minutes.


Ladle the soup into bowls, garnish with chopped parsley, and serve hot.
